Sheet-Pan Shrimp and Bacon

A Quick, Flavor-Packed Weeknight Feast

Craving something delicious and effortless? This vibrant dinner is your weeknight hero – quick enough for busy evenings, yet impressive enough to wow guests. With juicy shrimp, bold flavors and the oven doing most of the work, you’ll have a crowd-pleaser on the table in no time. Want a touch of smoky char? Just slip it all under the broiler for a minute and watch the magic happen.

Ingredients

1 pound shrimp, peeled and deveined

3 slices thick-cut bacon, cut into 1-inch pieces

1/2 cup soy sauce

2 tablespoons fresh lemon juice

1-2 tablespoons brown sugar

2-3 garlic cloves, grated

1-2 teaspoons fresh ginger, grated

2 tablespoons neutral oil, such as avocado

1 bunch asparagus, cut into 1-inch pieces

2 jalapenos sliced

3-4 scallions, sliced for garnish

Preparation

Preheat the oven to 400 degrees. Line a sheet-pan with foil.

Place the bacon on the sheet pan and cook in the oven for about 10 minutes, giving it a head start.

Make the sauce: In a large bowl, combine the soy sauce, lemon juice, brown sugar, ginger, garlic and oil. Whisk together and set aside.

Add the shrimp, jalapenos, and asparagus to the sauce and toss well to coat everything evenly. Remove the bacon from the oven and add the shrimp mixture to the sheet-pan. Toss everything to combine with the bacon. Roast until the shrimp are pink, about 6 to 10 minutes depending on their size. Top with the sliced scallions. Serve with cooked rice or noodles.

Note: If you don’t want it spicy, feel free to substitute bell peppers for the jalapeno.
